And finally my good friend Hop Backus has sent me a recipe from Chicago which is a heart-warming low-carb variation of traditional Tex Mex food .
2 cups of tomato salsa
1 large head of green or Savoy cabbage
1 lb of lean ground beef
1 oz of taco seasoning
1 chopped tomato
1 cup of cooked long-grain rice
2 cups of shredded smoked cheese.
Heat oven to 375 F. Pour 1.5 cups of the salsa into a baking dish. Set aside.
Put 10 to 12 outer cabbage leaves in pan of boiling water – cook for 2 mins till wilted. Place leaves on a paper towel and allow to cool.
Put the beef in a large bowl, sprinkle with taco seasoning and hand mix. Divide into 8 portions in the form of a patty.Divide the tomatoes, rice and cheese among the cabbage leaves and top with a patty. Fold the right and left sides of the cabbage leaf over the filling , then tightly roll up from the bottom to form a cabbage roll.
